Amla ki launji (Indian Gooseberry Pickle)

  • 1 tsp grated ginger
  • Salt according to taste

  1. Wash and pressure cook gooseberry along with 1/4 cup water.
  2. Turn off the flame after one whistle.
  3. Take the gooseberries out of the cooker once it has totally cooled down, gently press them to separate the segments, and then throw away the seeds.
  4. Green chilies, ginger, and asafetida are added after the cumin, fennel, fenugreek, and carom seeds have been added to the hot oil in the wok and have had a chance to crackle.
  5. Then add the gooseberry pieces, salt, turmeric, red pepper flakes, dry mango powder, and 1 tablespoon of water. Mix everything well, cover the wok, and cook the amla ki launji for 3 to 4 minutes.

After cooling, keep the launji in sterile, clean glass jars with a lid on for up to 10 days. If you used fresh amla to make the launji, you may freeze it for two to three months. Make sure to scoop using a spotless spoon. Launji prepared with frozen amla shouldn’t be frozen, in my opinion.

  • I advise keeping the shape of the sliced amla intact to prevent overcooking the launji. Amla should be well cooked without becoming mushy. Launji has a terrific texture in that way.
  • It’s best to leave the launji a bit runny towards the end of cooking because it thickens as it sits.
  • Before tempering the oil, you can roughly grind the spices in a mortar and pestle if you don’t like to chew on whole spices. Don’t powder the spices because that will make the launji extremely bitter.
