Ingredients of gajar ka achar

  • 500 gm carrots
  • 15 green chilies
  • 1 tsp red chili powder
  • 1 tsp salt
  • 1 tsp dry mango powder
  • 1 tsp mustard seeds, crushed
  • 1 pinch asafoetida
  • ½ cup mustard oil
  • 1 tsp dry mango powder
  • 1/2 tsp turmeric powder

  1. The carrots and green chilli should be well washed before being spread out on a kitchen towel and fully dried. Cut into finger-sized batons after being peeled.
  2. Crushed mustard seeds, red chili powder, salt, dried mango powder, turmeric powder, fennel seeds, and asafoetida should all be combined in a sizable, clean, dry mixing basin. Mix well.
  3. The mustard oil should be heated in a small pan. Pour heated liquid over the spice mixture and combine thoroughly.

NOTES:

  • adding lemon juice and vinegar prevents pickle from spoiling.
  • using til oil makes the pickle more tasty.
  • Keep the length and size of the carrot, green chili, and ginger same for a uniform look
  • To prepare the perfect pickle, always keep in mind to add mustard powder and chilli powder in a 1:2 ratio.
