  • 500 gm bonless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper

  3. Add the curry powder, cumin, coriander, turmeric, and cayenne pepper to the pot and cook for another minute, stirring constantly.
  4. Add the diced tomatoes and their juice, and coconut milk to the pot. Bring to a boil, then reduce the heat to low and let simmer for 15 minutes.
  5. Add the chicken back to the pot and let simmer for another 10 minutes, until the chicken is cooked through and the sauce has thickened. Season with salt and pepper to taste.
  6. Serve the chicken curry over cooked rice, garnished with chopped cilantro if desired. Enjoy!
