Frankie Recipe

frankie recipe is popular street food in India. Spiced vegetables are rolled and wrapped in chapati on which green chutney or tomato ketchup or mayonnaise are spraddled to enhance the flavor.

This veg Frankie recipe is one of the most loved Indian street food! Whole wheat roti or chapati is layered with spiced mashed potato rolls, green chutney, chopped onions, pickled green chilies, and frankie masala.

Generally, Frankie recipes are known as Kathi roll which is prepared of paratha or roti layered. Though, nowadays there are many variations in Frankie recipes have developed like cheese frankie, paneer Frankie, etc.

Think of your Frankie as an empty canvas and get creative! Add your favorite vegetable fillings and sauces. The Frankie stuffing can range from mixed vegetables to potatoes to paneer and even beans like rajma (kidney beans) or chana (chickpeas).

Ingredients for Frankie Recipe

stuffing:

  • tablespoons Oil
  • 1 tbsp Ginger Garlic Green chilli Paste
  • ¼ cup Capsicum
  • ½ cup Onion
  • ¼ cup Cabbage
  • 2 potatoes (boiled, peeled, and mashed)
  • ½ teaspoon Red chili powder
  • ¼ tbsp Turmeric Powder
  • ½ tbsp Coriander Powder
  • ¼ tbsp Garam Masala
  • ½ tbsp Dry Mango Powder
  • Salt as per taste

frankie dough:

  • 1 cup All Purpose Flour (maida)
  • ½ cup Whole wheat flour (Chapati atta)
  • water as required
  • Salt to taste
  • 2 tbsp Oil

Frankie Masala:

  • 2 teaspoons Red chili powder
  • 2 tbsp Coriander Powder
  • 1 teaspoon Garam masala
  • 2 teaspoons Roasted cumin powder
  • 2 teaspoon Amchur powder (dried mango powder)

For toppings:

  • 2 tsp butter
  • Onion ((Finely Chopped))
  • Tomato Ketchup
  • ¼ cup Green coriander chutney

Instructions for Frankie Recipe

For Dough and roti

  1. Take a bowl and add wheat flour and all-purpose flour to it.
  2. Then add salt and oil also.
  3. Then start adding little water at a time and keep kneading till you get a soft, smooth dough.
  4. And cover it with a moist cloth and rest for about a minimum of half hour.
  5. After resting time, knead the dough again to smooth it out. Then Take a pinch of sized ball dough. Make smooth balls and flatten them between your palm.
  6. Roll to a thin chapati on a lightly dusted rolling board.
  7. Once you have a few rotis rolled up and ready, heat the pan/skillet on medium heat.
  8. Gently place the rolled thin chapati on the hot tava. When you see small blisters and bubbles appearing, flip and cook the other side.
  9. We are partially cooking the rotis. We’ll do the rest of the cooking at the time of assembly.
  10. Remove it to a plate and cook the rest of them similarly. Stack the cooked rotis and keep them covered.

stuffing recipe:

  1. Heat the oil in a pan on medium heat.
  2. Once hot add ginger-garlic-green chili paste. Saute for 30-40 seconds or till the raw smell of ginger garlic goes away.
  3. Furthermore, add capsicum, cabbage, and onion. Cook it for 3-4 minutes.
  4. Now add boiled and mashed potatoes and mix well.
  5. add Red chili powder, Turmeric Powder, Coriander Powder, garam masala powder, Dry Mango Powder, and salt.
  6. Lower the heat so spices do not burn.
  7. Mix and cook for 2 minutes only.
  8. Your stuffing is ready. Cool it down till room temperature.

Frankie Masala

  1. Take a plate and add red chilli powder, dry mango powder, coriander powder, cumin powder, and garam masala. Mix well.
  2. Frankie masala is ready.

Frankie

  1. firstly, add butter to the tawa.
  2. take one roti and apply butter on both sides and roast the roti
  3. spread a generous amount of tomato sauce and green chutney.
  4. Now put 2 tbsp of stuffing on it.
  5. Then add onion and sprinkle a pinch of frankie masala.
  6. Fold gently like a roll. And wrap paper on the downside.
  7. Serve Frankie immediately with the yogurt raita.

Tips and Variations

  • firstly do not over-stuff the frankie with stuffing, as it will be difficult to roll and eat.
  • Use lightly cooked rotis that have brown spots.
  • The frankie stuffing can vary as per your choice. You can add more grated veggies like beetroot, radish, carrots, cucumber, etc.
  • Sealing the edges of your Frankie is key, you don’t want the gravy dripping onto your clothes at the first bite.
  • You can add your choice of chutneys or sauces.
  • finally, grate some cheese to prepare cheesy veg frankie or cheesy kathi roll.
