Ingredients for gond laddu

  • 100-gram gond
  • 100 grams or 1 cup of wheat flour
  • 300 gram Ghee
  • 300 grams jaggery
  • 2 tbsp cashews
  • 2 tbsp almonds
  • 2 tbsp raisins 
  • tablespoons pistachios – optional
  • teaspoon cardamom powder – optional

Instruction for Gond laddu

Frying Gond and wheat flour

  1. In a heavy bottom pan, heat some ghee and let it melt
  2. After the ghee melts little by little, add 100 grams of Gond/Edible Gum/Dinkh and stir continuedly and fry until golden. (add in batches)
  3. Once Gond is fried, use a ladle to spoon out the good from the ghee and keep it aside to cool down.
  4. Into the same pan containing the melted ghee, add whole wheat flour.
  5. Roast on medium to low flame till the flour color changes to golden brown color. This process takes about 20-25 min. Be careful as it tends to get burnt quickly.
  6. The mixture should be crumbly. Turn off the flame.
  7. Transfer the flour onto a plate.

Frying dry fruits

  1. Now into the pan, add cashews and almonds, and fry well on low flame until golden.
  2. Now, take out almonds and cashews on a plate.
  3. Now, add raisins to the pan and fry well.
  4. Now transfer the raising to the plate.
  5. Add 2 tablespoons pistachios. Fry for some seconds till their color changes.
  6. Remove and keep aside.
  7. Now, Add dry fruits to a grinder jar.
  8. Also, add the fried roasted Gond in a dry grinder jar.
  9. Grind on the pulse, and make a coarse powder.

Making gond ke laddu

  1. Now, place the pan on flame again and add 350 grams of crushed jaggery, 1 tbsp of ghee, and 2 tbsp of water, and melt the jaggery well.
  2. After the jaggery starts boiling, turn off the flame, and add roasted wheat flour, crushed gond, and dry fruit mixture.
  3. Now add 2 tablespoons of raisins and 1 teaspoon of cardamom powder.
  4.  Mix very well.
  5. When the Gond ladoo mixture is still hot and the heat is tolerable to you, take a heaped-sized portion of it in a spoon or in your palms. Shape in a round laddoo.
  6.  If the mixture does not hold shape, then add 1 to 2 tablespoons of ghee.
  7. Make medium-sized Gond laddu from this whole mixture.
  8. Now your Gond Laddu is entirely ready, and you can enjoy them.
  9. You can Store them in an air-tight steel container at room temperature for a couple of months.

  • Gond laddu can be halved or doubled or tripled.
  • Any variety of nuts and dry fruits can be added to this recipe as per choice.
  • If you are unable to make laddu and the mixture crumbles and looks dry, then add 1 to 2 tablespoons of ghee at room temperature. Mix and form laddu.
  • Replace jaggery with the same amount of sugar if you want to make dry fruits ladoo with sugar.
  • If the ladoo cannot hold shape and flattens then it means there is more ghee. Let the mixture cool completely and then shape it into laddu.
  • Make sure to add gond when ghee is hot. It should be puffed up nicely else it will be very chewy.
