Lauki Kofta Recipe (Step By Step) – Recipes Plaza

Lauki kofta is a light tomato-based delicious gravy dunked with koftas made from bottle gourd (lauki or ghia or dudhi).

Bottle gourd, known as lauki is generally not a popular vegetable in every household but it makes one of the best Indian curries – Lauki Kofta Curry in which deep-fried koftas (round shaped deep fried spicy dumplings).

perhaps any bottle guard curries or sabzi’s are not appreciated and is not preferred to consume as it is. but certainly, the kofta curry recipe would be a good alternative which is tasty yet healthy and nutritious.

You do not need any fancy ingredients too, this one will just need your everyday spices and other ingredients.

Ingredients

for Kofta:

  • 1½ cups grated Lauki
  • 5 tablespoons Gram Flour
  • Salt to taste
  • 2 tbsp corn flour (to coat)
  • 1/4 teaspoon Turmeric Powder
  • ½ tsp Kashmiri red chili powder
  • 1/2 tablespoon Ginger-Garlic Paste

For Gravy

  • 2 medium Tomatoes
  • 2 tablespoons Oil
  • Salt to taste
  • 2 tablespoons Cashew Nuts, soaked in water for 20 minutes
  • 1/2 teaspoon Cumin Seeds
  • 2 medium Onions, finely chopped
  • 1/2 tablespoon Ginger-Garlic Paste
  • 1 teaspoon Coriander Powder
  • 1/2 teaspoon Red Chilli Powder
  • 1/2 teaspoon Garam Masala Powder
  • 1/4 teaspoon Turmeric Powder
  • 3/4 cup Water

INSTRUCTIONS

kofta preparation:

  1. Peel and grate lauki. Squeeze out the water completely and keep that water for making gravy.
  2. Add the besan/gram flour, spice powders, and salt.
  3. Mix well and form small-sized round or oval balls.
  4. Coat with corn flour, Gently place the lauki kofta in the hot oil and deep fry till they are golden brown on all sides.
  5. Drain the fried kofta on a kitchen towel so that the extra oil is absorbed.

for Gravy:

  1. Blanch the tomatoes and crush them with cashew nuts to make a tomato-cashew puree.
  2. Heat 2 tablespoons oil in a saucepan over medium flame.
  3. add 1 teaspoon of cumin seeds and let them crackle for 3-4 seconds.
  4. Add ginger-garlic paste, chopped onion, and stir-fry until it turns light pink in color.
  5. Add tomato-cashew puree and mix well. Stir-fry for 3-4 minutes.
  6. Add red chili powder, coriander powder, garam masala powder, turmeric powder and salt.
  7. Mix well and stir-fry for a minute.
  8. stir and let the masala cook for 3-4 minutes more or till the mixture starts to leave oil.
  9. Add the strained bottle gourd juice. Add water. Stir and simmer lauki kofta gravy and cook for 10-12 minutes more.
  10. Add fried kofta balls to the gravy.
  11. Switch off the flame, cover, and let them be in the curry for a few minutes so that koftas will absorb all the flavors from the curry.
  12. Transfer it to a serving bowl and garnish it with coriander leaves

Serving Suggestions

Serve these lauki koftas along with Indian bread such as Laccha Paratha, Tawa Paratha, Phulka, Tandoori Roti, or even Punjabi Missi Roti.

It also tastes great with Jeera Rice, Matar Pulao, or any other lightly spiced pulao that you prefer.

Tips to make the best

  • Make sure that you deep fry kofta balls on medium flame. If you deep-fry koftas over high flame then they will turn dark brown immediately but remain uncooked inside.
  • You can also shallow fry koftas in non-stick aebleskiver pan (appam pan) to reduce usage of oil.
  • This recipe prepares chunky gravy due to chopped onions. However, if you prefer to have smooth gravy grind the onions when grinding tomatoes.
  • You can add sugar to your gravy if you like it sweet.
