Ingredients for Paneer dum biryani

Marination:

  • 1 cup curd/yogurt (thick)
  • ¼ teaspoon Red Chilli Powder
  • ¼ teaspoon Turmeric Powder
  • 1 teaspoon ginger-garlic paste
  • Salt, as per taste
  • ½ teaspoon roasted Coriander powder
  • 1 teaspoon Biryani masala or garam masala
  • 2 tbsp coriander (finely chopped)
  • 225 grams of paneer cut into cubes

For Cooking Rice:

  • 1 cup basmati rice (soaked for 20 minutes)
  • 6 cup water
  • 2 tablespoons ghee
  • Salt to taste
  • 2 pods cardamom
  • 2 bay leaf / tej patta
  • 1-inch cinnamon
  • 4 cloves
  • 2 green chilies, slit lengthwise

for biryani:

  • 2 tablespoon oil
  • 1 teaspoon ghee / clarified butter
  • 1 Clove
  • 1 Cardamom
  • 2-inch Cinnamon Piece
  • 1 Star Anise
  • 1 Bay Leaf
  • ½ teaspoon shahi jeera or use cumin seeds
  • ½ cup chopped Onions
  • 1 tablespoon chopped Coriander leaves
  • 1 tablespoon Mint leaves, optional
  • ½ teaspoon Biryani masala or garam masala
  • 4-5 strands of Saffron dissolved into warm cream or milk
  • 1.5 teaspoons chopped ginger
  • 1.5 teaspoon chopped garlic
  • Salt to taste
  • Water as needed
  • ½ cup Golden Fried Onions
  • 1 tablespoon Ghee (Clarified butter)

Instructions For Paneer dum biryani

marination paneer:

  1. To a large bowl add yogurt and whisk it until smooth.
  2. Then add ginger-garlic paste, coriander powder, Turmeric Powder, biryani masala, red chili powder, salt, chopped cilantro. Mix it well.
  3. The paneer cubes are then added. Until the marinade is evenly distributed over the paneer cubes, stir. For 30 minutes, place the bowl in the refrigerator with a cover on.

biryani rice preparation:

  1. First, pour 6 cups of water into a big container.
  2. Include spices such as 2 cardamom pods, 4 cloves, 1 inch of cinnamon, 2 bay leaves, and 1/2 tsp pepper.

  4. Add turmeric powder and biryani masala, mix and cook for a few seconds.
  5. Lower the heat and add marinated paneer and ¼ cup of water. Bring to a simmer.
  6. until the oil separates from the sides, sauté. avoid overcooking paneer since it gets rubbery.

  8. add 2 tbsp of fried onion, 2 tbsp of mint, and 2 tbsp of coriander to the top.
  9. Add a pinch of biryani masala, 2 tablespoons of saffron milk, 1 teaspoon of ghee, and 1/4 cup of water.
  10. With the cover, seal the pot. A pressure or manual cook button should be pressed. With the pressure valve in the sealing position, cook under high pressure for 6 minutes. After allowing the pressure to release naturally for five minutes, quickly release the pressure.
  11. Open the lid and fluff the rice with a fork. Place paneer biryani on a serving plate, top with cilantro and the remaining half of the fried onion.
