Ingredients of Tri colour Pasta

  • 200 gms penne

Orange and green colour

  • 1 cup fresh spinach, sliced
  • 1 medium tomato, sliced
  • 1 Onion, chopped
  • 1/4 cup butter (cubed)
  • 1 garlic chopped
  • Salt To Taste
  • Fresh cream 100ml
  • Green chilly 2 finely chopped
  • Black Pepper powder 1/4 tsp
  • Mint leaves finely chopped 1tbsp
  • Chilli flakes 1/2 tsp
  • Oregano 1/4 tsp

White Colour

  • 4 tablespoons butter
  • 4 cloves garlic (finely minced or pressed)
  • 1 ½ cups heavy cream (divided)
  • 1 ½ cups parmesan cheese (finely grated)

How to Make Tri colour Pasta

  1. Bring a large pot of salted water to a boil.
  2. Add pasta and let it cook for 10-12 minutes.
  3. Once cooked divide pasta into 3 equal portions and keep it aside.
  4. Boil 2 cups of water and blanch tomatoes for 4-5 minutes and peel the skin.
  5. Let it cool. Once cooled make fine tomato puree.
  6. Similarly, blanch spinach leaves in hot water and make a fine puree and keep it aside.

Orange colour Pasta

  1. In a pan fry 1 tsp of butter on medium flame.
  2. Add finely chopped garlic, green chilly.
  3. Add the onions and sauté till it becomes golden brown.
  4. Add tomato puree and fry it for 2-3 minutes.
  5. Add salt, chilli flakes, oregano and pepper powder. Sauté for 2-3 minutes
  6. Add fresh cream and mix well.
  7. Add 2-3 tbsp water (optional)
  8. Add cooked pasta and toss till the pasta is coated with sauce.
  9. Keep it on a medium flame for 2 more minutes.
  10. put off the flame.

 Green colour Pasta

  1. In a pan fry 1 tsp of butter on medium flame.
  2. Add finely chopped garlic, green chilly.
  3. Add the onions and sauté till it becomes golden brown.
  4. Add spinach puree and fry it for 2-3 minutes.
  5. Add salt, chilli flakes, oregano and pepper powder. Sauté for 2-3 minutes
  6. Add fresh cream and mix well.
  7. Add 2-3 tbsp water (optional)
  8. Add cooked pasta and toss till the pasta is coated with sauce.
  9. Keep it on a medium flame for 2 more minutes.
  10. put off the flame.

White colour pasta

  1. Add butter and garlic to a saute pan and heat over low heat. Allow cooking for about 5 minutes.
  2. Add 1 cup of heavy cream, stir, and allow to come to a simmer.
  3. Remove from heat and immediately add parmesan cheese and remaining heavy cream. Stir to combine.
  4. It will take several minutes for the cheese to melt. It will look goopy at first and then the sauce will be creamy and smooth.
  5. Add cooked pasta and toss till the pasta is coated with sauce.
  6. put off the flame.
