butternut squash ravioli with brown butter sage sauce


For the Butternut Squash Ravioli:

– 1 medium-sized butternut squash – 2 tablespoons olive oil – Salt and pepper to taste – 1 package of wonton wrapper – 1 egg, beaten

For the Brown Butter Sage Sauce:

– 1/2 cup unsalted  butter – 8-10 fresh sage  leave – Salt and pepper to  taste – Grated Parmesan  cheese for garnish


1a. Preheat your oven to 400°F (200°C).  b. Cut the butternut squash in half lengthwise and remove the seeds.  c. Brush the cut sides of the squash with olive oil, and season with salt and pepper. d. Place the squash halves on a baking sheet, cut side down, and roast in the preheated oven for about 45 minutes or until the flesh is tender.  e. Once cooked, scoop out the flesh from the squash and transfer it to a bowl.  f. Mash the roasted squash until smooth, and season with salt and pepper to taste.

2 . Assembling the Ravioli:

a. Lay out the wonton wrappers on a clean surface.  b. Place a small spoonful of the butternut squash filling in the center of each wrapper.  c. Brush the edges of the wrapper with beaten egg.  d. Fold the wrapper in half, creating a triangle, and press the edges firmly to seal the ravioli.  e. Repeat this process until all the filling is used.

3 . Cooking the Ravioli:

a. Bring a large pot of salted water to a boil.  b. Gently drop the ravioli into the boiling water and cook for 3-4 minutes, or until they float to the top.  c. Using a slotted spoon, carefully remove the cooked ravioli from the water and set them aside.

4 . Preparing the Brown Butter Sage Sauce:

a. In a separate saucepan, melt the unsalted butter over medium heat.  b. Add the fresh sage leaves to the melted butter and cook until the butter starts to turn golden brown and the sage leaves become crispy.  c. Remove the saucepan from the heat and season the sauce with salt and pepper to taste.


a. Place the cooked ravioli on serving plates or bowls.  b. Drizzle the brown butter sage sauce over the ravioli.  c. Garnish with grated Parmesan cheese and additional crispy sage leaves if desired
