Ingredients For Achari Dahi Bhindi Recipe

  • 400 grams ladies finger (Bhindi)
  • 1 medium size Onion (Finely chopped)
  • 1 medium size Tomato (Finely chopped)
  • 1-inch ginger grated or paste
  • 1 teaspoon cumin seeds (crushed)
  • 1 teaspoon mustard seeds (crushed)
  • 1 teaspoon fennel seeds (crushed)
  • 1/2 teaspoon Fenugreek Seeds (crushed)
  • 1/2 teaspoon Nigella Seeds
  • 1/2 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • 2 teaspoons red chilli powder or as to taste
  • 1/2 Cup Whisked Yogurt (Dahi)
  • 4 tablespoons Mustard Oil
  • Pinch of Asafoetida
  • Coriander leaves (finely chopped) for garnish
  • Salt as taste

Instructions for Achari Dahi Bhindi Recipe

  1. Bhindis should be cleaned and wiped before being sliced into long slices and set aside.
  2. In a pan, heat 2 tablespoons of oil. Bhindi slices, salt, and stir-fry on medium heat for 5 to 6 minutes, or until non-sticky and done. Take it out of the pan and set it aside.
  3. The remaining 2 tablespoons of oil in the same pan should be heated before adding the cumin, mustard, nigella, fennel, and fenugreek seeds.
  4. Now add a pinch of hing, some ginger paste, and some finely chopped onion. Sauté until soft and golden. Add the chopped tomatoes and continue to cook it until it becomes mushy and soft.
  5. Red chilli powder, turmeric powder, and coriander powder should all be added. Stir fry the mixture until oil begins to separate from the mixture.
  6. When it begins to boil, add the yoghurt that has been whisked into the mixture and stir it continually for 3–4 minutes.
  7. Then stir in the shallow-fried bhindis. Cook for two to three minutes over a low burner after adding salt to taste.
  8. The finished Achari Dahi Bhindi should be served as a side dish with roti, paratha, or dal rice and topped with chopped coriander.
