Gond ke laddu is a healthy and tasty ladoo recipe prepared from dry fruits, coconut, jaggery, and gond. it is a popular north Indian dessert recipe prepared especially during the wet or winter season to provide the necessary heat and warmth.

Ingredients for gond laddu
- 100 gram gond
- 100 gram or 1 cup wheat flour
- 300 gram Ghee
- 300 grams jaggery
- 2 tbsp cashews
- 2 tbsp almonds
- 2 tbsp raisins
- 2 tablespoons pistachios – optional
- 1 teaspoon cardamom powder – optional
Instruction for gond laddu
Frying gond and wheat flour
- In a heavy bottom pan, heat some ghee and let it melt
- After ghee melts little by little, add 100 grams of Gond/Edible Gum/Dinkh and stir continuedly and fry until golden. (add in batches)
- Once goond is fried, using a ladle spoon out the goond from the ghee and keep aside to cool down.
- Into the same pan containing the melted ghee, add whole wheat flour.
- Roast on the medium to low flame till the flour color changes to golden brown color. This process takes about 20-25 min. Be careful as it tends to get burnt quickly.
- The mixture should be crumbly. Turn off the flame.
- Transfer the flour on to a plate.
Frying dry fruits
- Now into the pan, add cashew and almonds, and fry well on low flame until golden.
- Now, take out almonds and cashew into a plate.
- Now, add raisins into the pan and fry well.
- Now transfer the raising into the plate.
- Add 2 tablespoons pistachios. Fry for some seconds till their color changes.
- Remove and keep aside.
- Now, Add dry fruits in a grinder jar.
- Also add the fried roasted gond in a dry grinder jar.
- Grind on the pulse, and make a coarse powder.
Making gond ke laddu
- Now, place the pan on flame again and add 350 grams of crushed jaggery, 1 tbsp of ghee, 2 tbsp of water, and melt the jaggery well.
- After jaggery starts boiling, turn off the flame, add roasted wheat flour, crushed gond and dry fruit mixture.
- Now add 2 tablespoons raisins and 1 teaspoon cardamom powder.
- Mix very well.
- When the gond ladoo mixture is still hot and the heat is tolerable to you, take a heaped size portion of it in a spoon or in your palms. Shape in a round ladoo.
- If the mixture does not hold shape, then add 1 to 2 tablespoons ghee.
- Make medium-sized gond laddu from this whole mixture.
- Now your Gond Laddu is entirely ready, and you can enjoy them.
- You can Store them in an air-tight steel container at room temperature for a couple of months.
Tips and Variations
- This recipe can be halved or doubled or tripled.
- Any variety of nuts and dry fruits can be added to this recipe as per choice.
- If you are unable to make laddu and the mixture crumbles and looks dry, then add 1 to 2 tablespoons ghee at room temperature. Mix and form laddu.
- Replace jaggery with the same amount of sugar if you want to make dry fruits ladoo with sugar.
- If the ladoo cannot hold shape and flattens then it means there is more ghee. Let the mixture cool completely and then shape into laddu.
- Make sure adding gond when ghee is hot. It should be puffed up nicely else it will be very chewy.
Serving suggestions
You can consume these energy aate ke laddu with gond in the morning during breakfast. With milk it makes a perfect combination.
